
We're twenty three days away from Puple Day! Are you getting excited? If you plan to celebrate this year, you might consider a recipe I made for my lemon cookies. For Purple Day, I add some lavender to them. Be careful not to add too much, though. Your friends won't enjoy eating bath soap!
Lemon Lavender Tea Cookies
Temperature: 350°
Ingredients:
1 1/2 tsp vinegar
1/2 cup milk
1/2 cup butter or margarine
1 egg
1 tsp shredded lemon peel
1 3/4 cups sifted all-purpose flour
1 tsp baking powder
1/4 tsp each baking soda and salt
Lemon Lavender Glaze
3/4 granulated sugar
1/4 cup lemon juice
1/4 tsp lavender oil or fresh lavender, diced and washed
Directions:
Whisk vinegar into milk. Cream together butter and sugar until light and fluffy. Beat in the egg and lemon peel. Sift the dry ingredients; add to the creamed mixture alternately with milk, beating well after each addition. Drop from teaspoon two inches apart on an ungreased baking sheet. Bake at 350° for 12-14 minutes or until golden brown. Remove at once from baking sheet. Brush cookies with Lavender Lemon Glaze. Makes 48 cookies.
